bulgur-stuffed bell peppers

Jean Talon Market is the place to find these beautiful peppers. My sister, Micheline, picked up a few and brought them to my mom’s and Maila, my parent’s caregiver and guardian angel stuffed them with bulgur, spinach and slices of scamorza on top. Simply delicious!



5-6 bell peppers (small ones for one serving)

1/2 cup of minced meat

1 cup of bulgur presoaked in boiling water

chopped onions and garlic

salt and pepper to taste

1 tbsp of basil-parsley pesto

1/4 cup finely chopped bell pepper

slices of scamorza (mozzarella cheese)

1/4 cup parmesan cheese

spinach, blanched and chopped

Slice top portion and remove seeds, wash and dry in paper towels

Rub some olive oil inside and out. Set aside

Sautee onions and garlic

Add minced meat when onions are translucent

When meat is almost done add pesto, bulgur & chopped bell peppers

Add salt and pepper to taste

After a few minutes add parmesan cheese. Mix well.

Fill bell peppers with the mixture, add a tablespoon of spinach and top with cheese slices.

Place in baking dish and cover with aluminum foil

Bake at 350* for 45 minutes to an hour

Remove aluminum foil and broil for 5 more minutes or until peppers are a nice roasted color
